Wild Garlic Pesto
It’s Spring! ITS WILD GARLIC TIME
 
Ingredients
- 100g of nuts (I used 60g Hazelnut 40g Pine nut)
 - 150g Wild garlic
 - 5 tbsp Olive oil
 - 100g parmesan
 - Pasta
 
Additional Ingredients
- Fresh anchovies
 - Canned beans
 
Method
- Toast nuts, put 20% to one side.
 - Add to a blender 80% of the nuts and the rest of the ingredients.
 - Add the unblended nuts and blended pesto to pan and cook for 5 mins.
 - Add pasta with 2-3 tbsp of pasta water.
 - Add additional ingredients.
 
Note: Sam think this needs loads of pasta as this makes quite a bit of pesto and the pasta/pesto ratio is well off.. words of warning…
