Lacto Fermented Wild Garlic



It’s Spring! Wild garlic is everywhere!

Ingredients

Method

  1. Cut the garlic into strips
  2. Wash the garlic
  3. Squeeze out the water content and weigh.
  4. Add 3% by mass of salt to the wild garlic
  5. Massage the salt into the wild garlic
  6. Put inside a sterilised Kilner jar.

This is a picture immediately after making. It will brown over time as it ferments.
