Lacto Fermented Wild Garlic
It’s Spring! Wild garlic is everywhere!
Ingredients
- 300g Wild garlic cut into strips
 - Deionised salt
 
Method
- Cut the garlic into strips
 - Wash the garlic
 - Squeeze out the water content and weigh.
 - Add 3% by mass of salt to the wild garlic
 - Massage the salt into the wild garlic
 - Put inside a sterilised Kilner jar.
 
This is a picture immediately after making. It will brown over time as it ferments.
