African Peanut Stew
Stew Ingredients
- 1-2 tbsp peanut oil
 - 500g sweet potato - peeled and diced
 - 1 x 400g tin of black-eyed peas, drained and rinsed / or black beans
 - 1 x green chilli
 - 3 tbsp tomato puree
 - 1 x 400g tin of chopped tomatoes
 - 500ml vegetable stock
 - 125g smooth peanut butter
 - 200g spinach
 - 1 tbsp lemon juice
 - Handful of corriander
 - 2 spring onions
 
Paste Ingredients
- 2 onions - roughly chopped
 - 5 garlic cloves - roughly chopped
 - 2 inch piece of ginger - roughly chopped
 - 1 tsp paprika
 - 2 tsp ground coriander
 - 1 tsp ground turmeric
 - 2 tsp cumin
 - 1 tsp ground fenugreek
 - 1 green chilli
 
Method
- Blitz paste ingredients
 - Add oil to pan and saute paste for 10 mins on a low/medium heat
 - Add sweet potato, black eyed pas/beans, 1/2 green chilli, and tomato puree. Combine
 - Add tinned tomatoes, vegetable stock, peanut butter. Season. Cover with a lid and simmer for 25 mins
 - Remove from heat and add spinach. Leave spinach to wilt for 5 minutes.
 - serve with coriander, spring onions, lemon juice and fresh chilli if wanted.
